Recipe

FILIPINO-STYLE KOREAN BBQ SHORT RIBS

Servings: 6

Prep time: 3 hours 10 minutes (plus overnight marinating)

Cook time: 16 minutes

Total time: 3 hours 30 minutes

Ingredients

For Marinade

  • ¾ cups light soy sauce

  • 3 tablespoons garlic, minced

  • 4 tablespoons brown sugar

  • 1 tablespoon rice wine

  • 1 tablespoon sesame oil

  • ¼ teaspoon chili powder

  • 1 sweet pear, grated

  • 3 tablespoons ginger, minced

  • 2 white onions, roughly chopped

For Ribs

  • 2½–3 pounds sliced beef short ribs

Directions

  1. Make the marinade by combining soy sauce, garlic, sugar, rice wine, sesame oil, chili powder, grated pear, ginger and onions in a blender and blend thoroughly.

  2. Place the short ribs in a heavy-duty freezer bag and pour in the marinade. Make sure to release all the air inside the bag before closing. Place the bag in the fridge and marinate overnight.

  3. Grill on high on the barbecue, an electric grill or a cast iron skillet for about 4 to 8 minutes per side while basting with the reserved marinade.

  4. Place on a serving plate. Share and enjoy!

Beverage pairing

Toss back shots of Korea’s national spirit, soju.

Pro tip:

For best results, and much less mess to clean up, ensure that the freezer bag is properly sealed before placing it in the fridge.
